With just eight main ingredients, this recipe is perhaps one of the easiest you may ever make. I cannot stress how important it is to taste your sauce though. Ingredients vary in taste and quality, so always taste and check your sauce to make sure the flavours are balanced.

Baked Hoisin & Lime Chicken

Ingredients

 

Serves: 4

Time: 50 mins in total

 

·   8-10 Boneless and skinless chicken thighs (around 650g)

·   75g Hoisin

·   1 Lime, zested and cut in half

·   2 tbsp Honey

·   1 tbsp Soy

·   2 tsp Rice wine vinegar

·   4 Cloves of garlic, peeled and grated finely

·   1 2.5 inch piece of ginger, finely grated (don’t worry about the skin)

·   Optional: spring onions, sesame seeds. If you like it spicy, add 1 tbsp of sriracha to the sauce.

 

Instructions

 

1.     Heat your oven to 200°C // 180°C (fan) // 6. Get your chicken out of the fridge and make sure it has been left out for about 20 minutes before you start cooking.

 

2.     Mix the hoisin, lime zest, honey, soy, vinegar, garlic, ginger and squeeze half of the lime juice into a bowl. Mix this together thoroughly, you may need to add more of certain ingredients to balance out the mixture. TASTE, TASTE, TASTE as you go along.

 

3.     Place the chicken thighs in a medium sized oven dish, cover with the marinade and put in the middle of the oven for 35-40 minutes. Take them out half way through and baste with the sauce, then return to the oven. They’re cooked when they’re no longer pink in the middle. If you’re wanting to serve the chicken with any rice or veg, I’d use this time to cook/prep anything!

 

4.     Once they’re cooked, leave them to rest under a sheet of baking paper for 5 minutes.

 

5.     Serve the chicken with plenty of the sauce and enjoy!!
