Kefir Tikka Chicken

I think kefir has to be in my top 5 favourite foods? I drink it every morning and have decided to use it here in place of yoghurt to marinade chicken. I’ve paired it with a tikka paste to give the chicken some char and tang. Tomato halves join the chicken in the oven to cook down and are mixed with the chicken cooking juices to create an easy tomato chutney to serve alongside.

Cacio e Finocchio

I’m pretty sure this goes against a lot of Italian’s culture, but this dish brings two of Italy’s finest offerings together perfectly. Think Carbonara X Cacio e Pepe with a little bit of fennel.
